Clumsy Dog Brisket Rub

Super simple BBQ Sauce two ways.  One Spicy and the other sweet and tangy.


Add all ingredients to a medium sauce pan over medium-high heat and bring to a simmer whisking them together.  After you get to a simmer remove from heat and let it cool for about 5 mins coming back to whisk it every now and then.  After that either use right away on the grill or for eating.  Or let it cool down to room temperature and put it in a sealed container in the refrigerator.  It should be good for a couple weeks probably.  Recipe yields about 1 1/2 cups, we always double it.


All in all this is about as basic as a tomato based BBQ sauce can get.  Go crazy and unleash your own flavor town experience.  For instance I saw one time they have this sriracha ketchup in the store and I wondered what this would do if I subbed the ketchup with this sriracha ketchup, or did a half and half.  Either way just saying go nuts, its not as intimidating as you might think, and a heck of a lot easier than you think too.


Ingredients

  • 1 cup ketchup
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1 tablespoon Worcestershire
  • 2 tablespoons yellow mustard
  • 1 tablespoon butter
  • 1/2 tablespoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Spicy Version

Use all the above ingredients, but then also add the following.

  • 1 tablespoon chili powder
  • ~2 tablespoon of hot sauce, Franks or Cholula something like that.  I just eye ball it here and as I'm letting it meld together whisking I'll add more honey if the spice gets too out of control, but you can only correct to a certain point.  But hey, learn by doing am I right?

Clumsy Dog Brisket Rub

While all our online recipes are easy, this one takes the cake on easy.


Continuing the keep it simple but tasty approach here is the Clumsy Dog brisket rub.  The ratios can be adjusted as needed, but the following recipe will yield more than enough for a very well seasoned 15 pound brisket with some to spare.  


Add all ingredients together into a mason jar and cover with lid, then shake to incorporate fully.  Don't do what I've done once in the past and trust that the 4 year old can actually screw the lid on tight, double check that ish.  Yield is about 3 cups give or take how precise you are.  


Ingredients

  • 1 cup kosher salt
  • 1 1/4 cup coarse grind pepper
  • 1/2 cup garlic powder
  • 2 tablespoons celery seed



It will last for awhile in the mason jar, but will start to get clumpy because there are no artificial things to keep it not clumpy.  If you want to size down the recipe, just keep the ratios the same.

Our recipe for an amazingly delicious good on anything BBQ rub. 


Zoomies BBQ Rub Ingredients

  • 1 Tbsp Kosher Salt
  • 1 1/2 Tbsp Coarse Black Pepper
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp (Light/Dark) Brown Sugar
  • 2 1/2 Tbsp California Lemon Peel
  • 2 Tsp Onion Powder
  • 2 Tsp Garlic Powder
  • 2 Tsp Ancho Chile
  • 1 Tsp Orange Peel


Combine ingredients in mason jar or mixing bowl.  Yield is just over half a cup.  Really good rub with some fruity and umami flavors that works on any meat.  Its low salt content means that you can easily layer this on top of another rub as well without overdoing the saltiness.  Go nuts and get messy.

Sweet Buffalo Sauce Ingredients


  • 12 Oz Hot Sauce (ie Franks)
  • 1 Stick Butter
  • 1/3 Cup honey 
  • 2 Tbsp Worcestershire Sauce
  • 2 Tbsp Pablano Powder (substitute with Hatch Red Chile Powder)
  • 1 Tsp Cayenne


Combine ingredients in saucepan.  Bring to a simmer, reduce heat and whisk together until well combined. Use it right away or store in the fridge for up to a week. (It might be okay for more than a week, but it has never lasted longer than that in our fridge....be an adult and use your best judgement.) This stuff is good on wings, burgers, pretty much anything you like!
